Brownies with a Twist

Do you like brownies? I am in love with brownies and it is out of this immense adoration that I came up with this recipe. To be completely honest, I found the base recipe on AllRecipes.com, but in an interest of shaving some calories and making them healthier, I made a few changes. It turns out these changes were right on the money and made them even moister, yummier and…okay, I will stop there because if I keep going, I will be forced to go in the kitchen and whip these babies up right now!

Just to let you know, these brownies have a bit of a fudge-like consistency and will melt in your mouth, so if want that texture, and you do, watch your oven and don’t overcook them.

Ingredients

1/4 cup butter

1/4 cup plain nonfat yogurt

1 cup white sugar (I sometimes use 3/4 cup and they are sweet enough)

2 eggs

1 teaspoon vanilla extract (I have been known to add an extra drop or two)

1/3 cup unsweetened cocoa powder (sometimes I add a little more)

1/2 cup all-purpose flour

1/4 teaspoon salt

1/4 teaspoon baking powder

a couple of sprinkles of cinnamon

*add-ins: 1/4 to 1/2 cup blueberries, I used frozen because that’s what I had, fresh would be fabulous, I’m sure. I also had some fresh cherries on hand that I sliced up and threw in, probably about five or ten cherries, de-pitted and cut in half.

**NOTE** You do not have to use these add-ins, but I had these extras on hand, and for some strange reason, decided to throw them in—OH MY!!!! I tasted one when they came out of the oven and it was literally a taste explosion in my mouth—Holy Brownie. I thought I died and went to chocolate heaven.

Directions

  1. Preheat oven to 350 degrees F (175 degrees C). Grease and flour an 8-in square pan. (I use cooking spray and dust the bottom of the pan with cocoa, no flour)

2. In a large saucepan, melt 1/4 cup butter and 1/4 cup yogurt, (the yogurt and butter don’t look super-smooth in the pan, but that’s okay, they mix fine with all of the other ingredients). Remove from heat, and stir in sugar, eggs, and 1 teaspoon vanilla. Beat in 1/3 cup cocoa, 1/2 cup flour, salt, and baking powder. Stir in the add-ins if you decide to use them, and sprinkle in the cinnamon. Spread batter into prepared pan.

3. Bake in preheated oven for 25-30 minutes. Do not overcook. (25 minutes will most likely be plenty of time)
